Today marks the one year anniversary that I decided to get off my butt and do something about my weight and health. My heaviest to lightest differential is FIFTY, yes, 50 POUNDS. I’ve gained about 5 pounds back, but it’s all muscle weight. I’ve been yoyoing at this number for a while, so this might be a good weight to maintain. Overall I feel better, sleep a little better (albeit still not enough), eat a LOT better.
We’ve been married for over two years now and I just finally opened one of our wedding gifts to use. It was an infrared oven (aka air fryer?) given to us by her side. Actually pretty useful cause it heats like an oven, without heating the whole damned house. Anyway, I got this crazy idea to use it to dehydrate kale to make kale chips. HOLY CRAP it worked! All I did was throw in the kale drizzled some Sriracha on it and let it run on low heat. Almost as easy as boiling water. I didn’t even need oil! Gotta make a ton more batches of this…
I just find something potentially better than Mexican bottled Coke. Coca-Cola Life. It’s also made with real sugar, no aspartame, no Hugh fructose corn syrup. Sure, it has stevia, and in my experience it can be too sweet; but 8oz is only 60 calories. Now, let’s see how it tastes…
So, I added to my insanity of being “healthier.” I decided to make spaghetti squash. Now, I have to preface this post with the fact that I have a hate-hate relationship with this… vegetable? When I was younger I was scarred by my mother who tried to pass this crummy yellow pumpkin thing as a “spaghetti noodle.” To this day, my mother claims she NEVER said the squash was regular spaghetti. I don’t believe her.
A couple of days ago I walked (3.39 mi round trip) to the Nob Hill near my work and picked up one of these guys:

Why was this any different from when I was younger? I used a crap load of sauce, probably much more than my mother did oh so many years ago. Maybe to the point where it wasn’t healthy anymore… However, that’s super less carbs than had I used my normal Barilla noodles. The squash noodles gave the sauce a surprisingly nice crunchy texture. I’ll end this post with a satisfying approval of the spaghetti squash.
Oh dear, I’ve been gaining .2lb daily since under the 1st milestone. All those undocumented “snacks” must stop! I get a little lazy on the weekends. I don’t stop working out I just do less walking and less workouts, but never “rest”. Must keep on trucking even on the weekends!
A side note on why I quotation marked
“Dieting.” I really don’t like calling what I’m doing dieting. I’m not following one diet over another, I’ve always hated fad diets. I am, however, watching and weighing (most of the time) what I intake. Ok, in a strict sense in the word “diet” it could be construed as a diet, but whatever. Being sensible about what I eat sounds better than … “Diet.” Everything in moderation, right? Even french fries!
Great now I’m sad again cause I’m thinking of french fries… Ok, back to whatever I was doing.
